I personally recommend Audacity .
Its open souce and using lame can also record as MP3 directly. The software for converting videos to Mp3 is listed at the upload page. That is free again (based on a open source technology)

Yes Audacity is good, I use it occasionally.
I am a mac junkie and garageband rocks totally for recording music !
Cubase Rules ….. eeeeha!
Cubase / Nuendo + Sound forge here!
Cubase (ok Nuendo too, Sumit)....... and if ure in a hurry, go for Goldwave…i love tht tool…
I thought Goldwave was more of an academic tool :)
People in IIT used to use it to do all sorts of crazy thing!
I use Mixcraft. Its very user friendly. I tried a lot of other softwares but they were much beyond my comprehension.

one of the features it has is the voice extraction – so that you can just have the music and sing along for recording. And its free.
what do others use if they want to record their voice without a band?
