I personally recommend Audacity .

Its open souce and using lame can also record as MP3 directly. The software for converting videos to Mp3 is listed at the upload page. That is free again (based on a open source technology)

one of the features it has is the voice extraction – so that you can just have the music and sing along for recording. And its free.

what do others use if they want to record their voice without a band?
